I love bundt cake recipes. They make a huge cake ready to serve your office mates, church friends or family at any social event. If your lucky, there might be a piece left over for your enjoyment the next day. I spotted this recipe a week or so ago. I did alter the original recipe to my liking. I chose to keep the skin on the apples. It makes me feel like the cake is a little healthy. I also chopped up my apples to small pieces but large enough to be able to spot them in the cake. I love to be able to bite into a chunk of apple once the cake has been baked. To me, it is so delicious. I did bake this recipe on Saturday and took it to a church social. It was a huge hit. No one even suspected that it was gluten free. It was so moist and the cream cheese filling was an added treat. One of the compliments I received was regarding the icing. It reminded my friend of a praline icing that her grandmother used to make. Bingo! That was my goal: to treat others to a moist and delicious cake that will stir memories of family recipes. I’m already ahead of you. It’s on my baking list for our family Thanksgiving feast next week. Can’t wait!

Gluten Free Apple-Cream Cheese Bundt Cake
Ingredients
Cream Cheese Filling
- 1 8 oz. package Cream Cheese (Softened)
- 1/4 cup Butter (Softened)
- 1/2 cup Sugar
- 1 Large Egg
- 2 Tbs. GF Flour Blend
- 1 Tsp. Vanilla
Apple Cake Batter
- 1 Cup Pecans (finely chopped)
- 3 Cups GF Flour Blend
- 1 Cup Sugar
- 1 cup Brown Sugar (Firmly Packed)
- 2 Tsp. Cinnamon (Ground)
- 1 Tsp. Salt
- 1 Tsp. Baking Soda
- 1 Tsp. Nutmeg (Ground)
- 3 Large Eggs (Lightly Beaten)
- 3/4 Cup Oil
- 3/4 Cup Applesauce
- 1 Tsp. Vanilla
- 3 Cups Gala Apples (Chopped (I did not peel mine))
Praline Frosting
- 1/2 Cup Brown Sugar (Firmly Packed)
- 1/4 Cup Butter
- 3 Tbs. Milk
- 1 Tsp. Vanilla
- 1 Cup Powdered Sugar

| Step 1 | |
| Prepare Filling: Beat together cream cheese, butter and sugar on medium speed until blended and smooth. Add egg, flour and vanilla. Beat just until blended. Set aside. | |

| Prepare Batter: Preheat your oven to 350 degrees. Stir together GF flour blend, sugar, brown sugar, cinnamon, salt, baking soda, and nutmeg in a large bowl. Stir in eggs. Add oil, applesauce and vanilla stirring until dry ingredients are moistened. Stir in apples and pecans. | |

| Spoon two-thirds of the apple mixture into a greased Bundt pan. Spoon Cream Cheese Filling over apple cake batter, leaving a 1-inch boarder around the edge of the pan. Swirl filling through the apple cake mixture using a butter knife. Spoon remaining apple mixture over Cream Cheese Filling. | |

| Bake at 350 degrees for 1 hour and 7 minutes or until a long wooden pick inserted into the center comes out clean. Cool cake in pan on a wire rack for 15 minutes. Remove from pan and put on wire rack to cool completely (about 2 hours). | |
| Praline Frosting | |

| Prepare Frosting: Bring 1/2 cup brown sugar, 1/4 cup butter and 3 Tbs. milk to a boil in a 2 qt. saucepan over medium heat, whisking constantly. Boil 1 minute, whisking constantly. Remove from heat, stir in vanilla. Gradually whisk in powdered sugar until smooth. Stir gently 3-5 minutes until mixture begins to cool and thickens slightly. Pour immediately over cooled cake. Sprinkle frosting with chopped pecan pieces. | |
