Easy Peasy: Chocolate Cashew Trail Mix

It’s been a while since we’ve posted an Easy Peasy recipe, and I didn’t want to let the tradition die. Actually we’ve only done one other Easy Peasy post, but I think it should be a tradition. Mostly because of it’s very mature and creative name.

Anyway, Easy Peasy recipes aren’t really recipes, but simple things you can throw together. We’ve been making this trail mix lately and it is awesome. My husband loves trail mix, but it can get really expensive, and it can sometimes have wheat in it. I typically whip this up every week or so and it makes SO much. I munch on it during the day instead of eating cupcakes, and my husband takes it to work. It’s a great thing to have on hand, especially when I’m craving something a little sweet.

To make this, mix the following:

  • 14 oz can of lightly salted cashews
  • 1 regular sized package Craisens (I use reduced sugar)
  • 10 oz package 60% Cacao Bittersweet Chocolate Baking Chips
A few tips:
  • I’ve found the best place to store this is an airtight plastic container.
  • If you find this too sweet, add some additional almonds or pistachios…both are excellent in this.
  • I strongly recommend buying a high quality brand of chocolate chips for this.  It makes a huge difference!
